Lazy Father's Day...

Hi everyone! Father's Day was a lazy day for us! I made brunch for my little family and they loved it! We got up and opened presents...You, my dear readers will reap the benefits due to the new Rib Rack I got Mikee. He will be doing ribs soon and I will blog the experience.
Next, I made eggs, bacon, and hash browns. No special recipes for these...just straight up classic.
Eggs Scrambled- Just eggs in a sprayed pan...I salt and pepper them in the pan, I add cheese in the pan if someone wants.
Bacon- microwaved! Put 5 slices on a paper plate with 2 paper towels and 1 towel on top...wave for 4 minutes! Fabu, comes out crisp and drained of fat. Mikee gets the Microwave Bacon credit!
Hash Browns- I use pre-shredded hash browns in a bag, (you can find them in the egg section of the market), Crystal Farms "Simply Potatoes", 20oz bag. These are great because they are already drained...this makes cooking faster. I put them in a hot saute pan with salt and pepper...
then I sprinkle about 4 Tbls of Olive oil over them and toss till they are browned and crispy.
I also served cinnamon raisin toast.
A good time was had by all!

Two Minute Tuna!


I can't believe I posted that picture of me.... I was full of painkillers and so swollen! Oye! I am so much better now!
This is so easy...This recipe is done with a George Forman Grill.
1 Tuna Steak
1 Tsp Toasted Sesame Oil
1 1/2 Tbls Toasted Sesame Seeds
Pre-heat your Grill
Brush Fish (Both Sides) with the Oil
Sprinkle (Both Sides) with Sesame Seeds
Put grill cover down and cook for 2 to 3 minutes for rare.
Serve with PONZU dipping sauce.
***You can do this with a frozen Tuna Steak...Cook it the same way...it will still be cold inside and that's ok...slice and put in fridge to defrost for 10 minutes and it will be perfect!

Recovery in the Raw!

To my Dear Readers, Friends, & Family....
Thank you so much for all your concern... I took this picture for all of you, so that you can see that I am ok and on the mend. I must really love all of you to send out this picture with no make up and pumped with fluid & air, (this is what the nurse said they did). I was still able to put my pink flower barrettes in my hair! Ha! I stopped the pain killers last night and I am just very tired, my abdomen is a little sore, (nothing Tylenol can't handle), and my throat is raw...it's hard to talk. All in all it's not as bad as I thought it was going to be...My gang is taking such good care of me and I am so proud of them...Mikee makes great canned soup and he is actually taking all the phone calls. Alexis is my best nurse! Gidget hasn't left my side. I know i sent you all a new post alert on Monday and some of you did not get the link, just scroll down and you will see the recipes. I love you all!

Promised Pre Surgery Yummies!




So...I was in a funk all weekend! Just couldn't get in front of the computer...I just work better under pressure! So here I am as promised... I just had to get you some recipes so that you would have something to eat while I'm recovering!
This salad is so easy to put together and you don't have to make fresh pasta, you can use leftover pasta. This is such a pantry go to dish. This can be a main or a side.
Shrimp and Pasta Salad
1 LB Box of Mueller's Curly Twists cooked according to package, drained and cooled (very important to be cool)
2 Cans of Bumble Bee Tiny Salad Shrimp
Juice of 1/2 a Lemon
1/2 Tsp Kosher Salt
1/4 Tsp Fresh Ground Pepper
4 Tbls Low Fat Mayo
1 Tbls fresh Chopped Dill
Mix all ingredients together and enjoy!
The Roast
This is a great comfort food meal and easy to prepare...Roast Beef and Cornbread Stuffing! Kind of winter in the summer...ha!
The best part is that the meat is done on the grill...Michael did a great job as usual (ok...sue me, the guy is cute when he's grillin!)
You will need:
3-3 1/3 LB Eye Round Roast
2 Tbls Extra Virgin Olive Oil
Kosher Salt
Fresh Ground Pepper
2 Full sprigs of fresh Rosemary, remove leaves and finely mince
9 whole Peeled Cloves Garlic
Kitchen Twine
Meat Thermometer
Pre-heat grill to 300...we will be grilling with indirect heat.
Rub meat with Oil
Season with the Salt & Pepper
Sprinkle Rosemary and pat it on
Make 9 slits on all sides of meat and insert Garlic Cloves (make the slits as deep as the Garlic is long)
Tie the beef as in the picture...you don't have to be fancy, just tie 3 to 4 strings around it.
Put it on the grill away from flame & cook for 1 to 1 1/2 hours till meat reaches internal temp of 150 . Stick the thermometer in the flat side about 1/3 the way in.
Take it off the grill cover with foil & let rest for 10 minutes.
Cut off string and slice....YUM!
Stuffing
You can do all kinds of add-ins, but my crew likes it simple.
1 6oz box of Stove Top Cornbread Stuffing made according to the box instructions, but substituting Chicken Broth for water.
While that's going, spray a 8" baker with Cooking Spray
Saute 1 small chopped Onion till translucent
Soak 1/2 cup Raisins in hot water while waiting for stuffing.
When stuffing is done fluff it up with a fork and mix in the Onions and drained Raisins.
Pour into baker and bake on 350 for about 20 minutes or until golden on top.
SOOOO Good!

Whirly Girl!


Sorry for being lax Dear Readers... I have been busy with doctor appointments in preparation for surgery a week from Wednesday.
For those of you that don't know...I am having a partial hysterectomy or as it's called an "oofrectomy"....they will be taking my ovaries, tubes, and giving me a good cleaning!
This is all a preventative so that I won't have to go through what Mom went through. I got 4 opinions and all agreed they gotta go! At least I know when I'll start with the Flashes!
I will try to give you a few posts this week so that you can have something good to eat, while I'm on IR ("injured reserve" for those of you that are not sports fans!).
Back to the kitchen...Do you love my Mother's Day Present???!!!!
It's the KitchenAid 5 Speed Blender!
My 20 year old Black and Decker newlywed blender served me well until it finally blew up!
It probably lasted so long because, when we first got married I couldn't boil water and I didn't need it in the bedroom! Ha!
