This is a big request item from my friends when am invited for dinner...we all love to bring a great dish, but this one has become very popular.
This is my roasted veggie platter...it's my own take...it is a little time consuming, but well worth it. I roast like vegetables on their own trays...let them cool...then assemble the platter.
Tray 1 - Baby Yukon Golds & whole cloves of garlic
Tray 2 - carrots & parsnips
Tray 3 - broccolli & cauliflower with chopped onion
Tray 4 - brussel sprouts with shallots
Each tray is then tossed with olive oil, salt, & pepper, roast @ 475 degrees till veggies are carmelized...let each tray cool, then assemble platter.
