Promised Pre Surgery Yummies!




So...I was in a funk all weekend! Just couldn't get in front of the computer...I just work better under pressure! So here I am as promised... I just had to get you some recipes so that you would have something to eat while I'm recovering!
This salad is so easy to put together and you don't have to make fresh pasta, you can use leftover pasta. This is such a pantry go to dish. This can be a main or a side.
Shrimp and Pasta Salad
1 LB Box of Mueller's Curly Twists cooked according to package, drained and cooled (very important to be cool)
2 Cans of Bumble Bee Tiny Salad Shrimp
Juice of 1/2 a Lemon
1/2 Tsp Kosher Salt
1/4 Tsp Fresh Ground Pepper
4 Tbls Low Fat Mayo
1 Tbls fresh Chopped Dill
Mix all ingredients together and enjoy!
The Roast
This is a great comfort food meal and easy to prepare...Roast Beef and Cornbread Stuffing! Kind of winter in the summer...ha!
The best part is that the meat is done on the grill...Michael did a great job as usual (ok...sue me, the guy is cute when he's grillin!)
You will need:
3-3 1/3 LB Eye Round Roast
2 Tbls Extra Virgin Olive Oil
Kosher Salt
Fresh Ground Pepper
2 Full sprigs of fresh Rosemary, remove leaves and finely mince
9 whole Peeled Cloves Garlic
Kitchen Twine
Meat Thermometer
Pre-heat grill to 300...we will be grilling with indirect heat.
Rub meat with Oil
Season with the Salt & Pepper
Sprinkle Rosemary and pat it on
Make 9 slits on all sides of meat and insert Garlic Cloves (make the slits as deep as the Garlic is long)
Tie the beef as in the picture...you don't have to be fancy, just tie 3 to 4 strings around it.
Put it on the grill away from flame & cook for 1 to 1 1/2 hours till meat reaches internal temp of 150 . Stick the thermometer in the flat side about 1/3 the way in.
Take it off the grill cover with foil & let rest for 10 minutes.
Cut off string and slice....YUM!
Stuffing
You can do all kinds of add-ins, but my crew likes it simple.
1 6oz box of Stove Top Cornbread Stuffing made according to the box instructions, but substituting Chicken Broth for water.
While that's going, spray a 8" baker with Cooking Spray
Saute 1 small chopped Onion till translucent
Soak 1/2 cup Raisins in hot water while waiting for stuffing.
When stuffing is done fluff it up with a fork and mix in the Onions and drained Raisins.
Pour into baker and bake on 350 for about 20 minutes or until golden on top.
SOOOO Good!
